Greek Pasta Salad

The olives and feta are a must. Any additional vegetables of your choosing would work well in this simple and delicious salad.

Ingredients:
4 oz. Feta Cheese10 oz. uncooked penne pasta1 teaspoon dried oregano1/4 cup red onion, minced1 lb. cooked shrimp, peeled1/4 cup pitted, chopped Greek black olives1 tomato, seeded and diced1/2 cup chopped parsleyblack pepper to taste1 (7 oz. ) bottle roasted red pepper, drained, diced1/2 cup Vinaigrette dressing of choice

| Instructions: |
| Bring 6 cups water to a boil in a large saucepan.
Add penne pasta and cook according to package directions. Drain in a colander and rinse with cool water. Set aside.
Combine cooked shrimp, dressing, tomato and oregano in a large bowl.
Add pasta and all the remaining vegetables.
Toss gently to mix. Cover and chill.
Serve with crumbled Feta Cheese. |
